CRUNCHY HAZELNUT NICE CREAM RECIPE

 

You heard us right, we said Nice Cream. Dairy-free, refined sugar-free, gluten free and delicious! Whipped up by Plenish friend and wellness coach Nicky Clinch to give you all the summer sensations without unnecessary additives.

 

Serves 8-10

 

INGREDIENTS:

4 Bananas, chopped and frozen

200g Creamed Coconut

400mls Plenish Hazelnut Milk

150g Raw Cocoa Nibs

Pinch of Sea Salt

3 tsp Maple Syrup

2 Vanilla Pods

Fresh Strawberries, Raspberries, Peaches, Nectarines & Cherries

 

METHOD:

Add your frozen chopped banana to a high-speed food blender. You will need to use a high-speed blender or food processor otherwise you just won’t get the desired creaminess that you’ll need.

Add the remainder of the ingredients except the cocoa nibs and blend till creamy and smooth.

Pour the mixture into a loaf tin or tray and mix in the cocoa nibs. (Stir in will with a chopstick or spoon.)

Put in the freezer until really well set – usually 24hours.

Once set take out, let it soften for 5 minutes so you can scoop it out easily and serve with fresh fruit and refined sugar-free cookies.  Enjoy!
